Here are some new recipes to try out in your crockpot. Just print out this blog post, highlight the ingredients you don't have on hand and take the post to you with the grocery store to do your grocery shopping. Voila! A week's-worth of dinners almost made for you (and one dessert!)
CROCK POT SPANISH RICE
1 lb browned ground beef
1 small onion - finely chopped
2-3 carrots - finely chopped
2 stalks celery - finely chopped
1 large can (28 oz) diced tomatoes
1 16 oz can red kidney beans
1 16 oz can white kidney beans (AKA cannellini beans)
16 oz beef stock - I use the kind you make from bouillon cubes
1 & 1/2 teaspoon oregano
1 teaspoon pepper
2 & 1/2 teaspoon parsley
10 oz jar (+or-) spaghetti sauce depending on how soupy you want it
4 oz ditalini pasta (shaped like short little tubes)
Brown the beef and then throw everything in crockpot except pasta. Cook on low for 7 hours. I don't recommend high...it burned the time I tried the high setting. Cook pasta separately to al dente, then add to pot just prior to serving.
Chicken Cordon Bleu
8 boneless skinless chicken breast.....Pound them out to flatten
8 thin slices of ham
8 thin slices of Swiss cheese
1/2 flour seasoned with salt, pepper and garlic powder
1 large onion thinly sliced
1/2 cp chicken broth
1/4/1 cp parmesan cheese, grated
2 cans of cream of mushroom or cream chicken soup...
Place a slice of ham and cheese on flattened chicken breast and roll up. Secure with toothpicks and roll each in seasoned flour to coat, set aside on platter.
Add onions and chicken broth into the bottom of the crockpot and then start adding your chicken,laying them flat and start another layer.
Add your cans of cream soup and topp wth cheese.
Cook on low for about 6 - 7 hrs or 3 to 3 1/2 hours on high
I personally use alot more cheese:)
Keilbasa w/ scallopped potatoes
Slice red potatoes and placed in crockpot. combine 1 can campbells cheddar cheese soup, evaporated milk, 1 can of cream of mushroom (I have used many different flavors, celery, broccoli) and pour over potatoes. sliced @ 1-2 lbs. keilbasa, add to crockpot. Top w/ vegetable of your choice, but we used peas & carrots and it was awesome. Cook @ 4-5 hrs. on low. you will love it!!
Pasta Fagioli Soup
1 1/2 c. long grain rice
3 c. tomato juice
1 chopped green pepper
1 lb. hamburger meat, cooked & drained
1/2 c. butter
1 chopped onion
1 1/2 tsp. salt
Saute rice in butter until golden brown, place in crock pot with remaining ingredients. Stir well. Cover, cook on low for 4 to 6 hours, high 2 to 3 hours.
Sprinkle with cheese of your choice. Serve with sour cream and tortillas.
This is a recipe I found on a copycat recipe website recently. It tastes exactly like the Pasta Fagioli Soup from the Olive Garden restaurant.
Super easy. This fills my large crockpot.
Heirloom Carrot Spoon Cake
1 (18 1/4 ounce) box spice cake mix
1 (3 1/2 ounce) box instant butterscotch pudding mix
1 cup water
2 cups shredded carrots
3/4 cup canola oil
1 (8 ounce) can crushed pineapple
1 cup sour cream
Spray a 5-quart slow cooker with butter flavored cooking spray. Combine all ingredients in large mixing bowl. Beat with electric mixer on medium speed for 2 minutes. Transfer to slow cooker. Place a paper towl over top of slow cooker. Cover and cook on LOW for 4 1/2 to 6 hours.
The paper towl absorbs the moisture and does not allow the water to drop onto the cake.
